Ridgeback Safari The “Safari” is the flagship of the Ridgeback winery, made in very small quantities. A blend of 36% cabernet franc, 28% Cabernet Sauvignon, 26% Merlot, and 10% Petit Verdot, it is very inviting, warm, with lingering aromas of chocolate, dark fruits and blackberry on the nose; the palate is smooth and forceful yet elegant with fine-grained tannins and multilayered flavors. Drinks so well right now, especially with duck or venison.
Clos Noly Pouilly-Fuisse is one of the greatest white of Southern Burgundy; it is named after the oldest vineyard at Domaine Manciat-Poncet. Aromas of apple and orange blossoms give way to a lively mouth full of crisp orchard fruits and a honeycomb-like texture and flavor.
